Rice - You Fan (Fried Glutinous Rice)

‘You Fan’ in Mandarin is a type of fried glutinous rice. I like it, but don’t eat too much at a time because it will make your stomach feel very full.


Ingredients – Makes 3 servings

· 2 rice cooker cups glutinous rice

· ¼ clove garlic, chopped finely

· 3 slices ginger, chopped finely

· 1 Chinese sausage, sliced

· ¼ cups dried shrimps

· 5-6 dried mushrooms, soaked in water and cut into slices

· 2 Tbsp cooking oil

· 1 Tbsp sesame oil

· 1 Tbsp soy sauce

· 2 tsp dark soy sauce

· A dash of white pepper

· 1 stalk spring onion, cut

· A little fried shallots

Method

1. Soak glutinous rice for 4 hours. Steam glutinous rice or cook it with enough water to cover it in the rice cooker.

2. Add cooking oil to a hot wok, reduce to medium heat, and then add garlic and ginger. Stir fry until fragrant. Add Chinese sausage, dried shrimps and mushrooms, stir fry until fragrant too. Add sesame oil, soy sauce, dark soy sauce and white pepper, and then the cooked glutinous rice. Stir fry well (use a silicone ladle to stir fry as glutinous rice is sticky).

3. Garnish with spring onion and fried shallots.

材料 - 3人份量

  • 2杯(电饭锅)糯米
  • ¼ 蒜,切细
  • 5 生姜,切细
  • 1 腊肠
  • ¼ 虾米
  • 5-6 冬菇,浸水后切丝
  • 2汤匙 食油
  • 1汤匙 麻油
  • 1汤匙 酱油
  • 2茶匙 黑酱油
  • 少许 胡椒粉
  • 1 青葱,切细段
  • 少许 油炸葱

做法

1. 糯米浸水4小时,用蒸煮或若用电煮饭锅,水位盖过糯米即可。

2. 加食油在热镬,改调中火,加入蒜和生姜,炒至有香味。加入腊肠、虾米和冬菇,再炒至有香味。加入麻油、酱油、黑酱油和胡椒粉,然后加入糯米饭,炒至均匀(用silicone杓子炒拌黏性的糯米饭)。

3. 撒上青葱和油炸葱。
