Vege - Xing Guo (Sponge Gourd)

The dish of vegetable sponge (sponge gourd) with egg is delicious, I like it.


Ingredients – Makes 2 servings

· 1 vegetable sponge, peeled & cut

· 1 large eggs

· ¼ cup dried shrimp

· ¼ clove garlic, chopped finely

· 2 Tbsp cooking oil

· A little salt or soy sauce

· A dash of white pepper or chili powder

· ½ cup water


Method

  1. Add cooking oil to a hot wok, reduce to medium heat, fry the garlic and dried shrimp until fragrant. Then add vegetable sponge, salt or soy sauce, white pepper or chili powder and water, fry the vegetable sponge until soft, and then add egg. Stir a little.
  2. Cover the wok to simmer until the egg is cooked.


菱角丝瓜/菜瓜加蛋,是很可口的一道菜肴,我很爱吃。


材料 - 2人份量

  • 1 菱角丝瓜/菜瓜,削皮切段
  • 1 鸡蛋
  • ¼ 虾米
  • ¼ 蒜,切细
  • 2汤匙 食油
  • 少许 盐或酱油
  • 少许 胡椒粉或辣椒粉
  • ½


做法

  1. 在热炒锅加入食油,调中热,将细蒜和虾米爆香,然后加入菱角丝、盐或酱油、胡椒粉或辣椒粉和水。菱角丝瓜炒软,即可加入蛋,稍搅拌打散。
  2. 盖上锅盖焖至蛋熟即可。

Egg - Chai Por Nooi (Preserved-turnip Omelet)

‘Chai Por Nooi’ a preserved-turnip with egg. This dish is very common in Chinese families; my late-mom used to cook it often.

Ingredients – Makes 1-2 servings

· 2-3 Tbsp preserved-turnip

· 2 large eggs

· ¾ tsp soy sauce

· A dash of white pepper

· 2 Tbsp cooking oil

· A little fried garlic or chopped spring onion (optional)


Method

1. Rinse the preserved-turnip in water, add eggs, soy sauce, white pepper and fried garlic or chopped spring onion, and beat slightly.

2. Add cooking oil to a hot pan, reduce to medium heat, and then add the egg mixture. Fry the omelet until the underside is golden then flip it and fry until the other side is golden too.

菜脯蛋是华人家庭的家常便饭一菜肴,我先母就常炒这菜肴。


材料 - 1-2人份量

  • 2-3汤匙 菜脯
  • 2 鸡蛋
  • ¾ 茶匙 酱油
  • 少许 胡椒粉
  • 2汤匙 食油
  • 少许炸蒜或细段青葱(可有可无)


做法

  1. 用水洗净菜脯,加入蛋、酱油、胡椒粉和炸蒜或细段青葱,稍搅拌打散。
  2. 在热平底锅加入食油,调中热,然后蛋材料倒在平底锅煎至蛋底片呈金黄色,再翻另一面也煎至呈金黄色。

Rice - You Fan (Fried Glutinous Rice)

‘You Fan’ in Mandarin is a type of fried glutinous rice. I like it, but don’t eat too much at a time because it will make your stomach feel very full.


Ingredients – Makes 3 servings

· 2 rice cooker cups glutinous rice

· ¼ clove garlic, chopped finely

· 3 slices ginger, chopped finely

· 1 Chinese sausage, sliced

· ¼ cups dried shrimps

· 5-6 dried mushrooms, soaked in water and cut into slices

· 2 Tbsp cooking oil

· 1 Tbsp sesame oil

· 1 Tbsp soy sauce

· 2 tsp dark soy sauce

· A dash of white pepper

· 1 stalk spring onion, cut

· A little fried shallots

Method

1. Soak glutinous rice for 4 hours. Steam glutinous rice or cook it with enough water to cover it in the rice cooker.

2. Add cooking oil to a hot wok, reduce to medium heat, and then add garlic and ginger. Stir fry until fragrant. Add Chinese sausage, dried shrimps and mushrooms, stir fry until fragrant too. Add sesame oil, soy sauce, dark soy sauce and white pepper, and then the cooked glutinous rice. Stir fry well (use a silicone ladle to stir fry as glutinous rice is sticky).

3. Garnish with spring onion and fried shallots.

油饭是一种糯米饭,我很喜欢吃,但可不能一次吃太多,它会令肚子觉得很涨


材料 - 3人份量

  • 2杯(电饭锅)糯米
  • ¼ 蒜,切细
  • 5 生姜,切细
  • 1 腊肠
  • ¼ 虾米
  • 5-6 冬菇,浸水后切丝
  • 2汤匙 食油
  • 1汤匙 麻油
  • 1汤匙 酱油
  • 2茶匙 黑酱油
  • 少许 胡椒粉
  • 1 青葱,切细段
  • 少许 油炸葱

做法

1. 糯米浸水4小时,用蒸煮或若用电煮饭锅,水位盖过糯米即可。

2. 加食油在热镬,改调中火,加入蒜和生姜,炒至有香味。加入腊肠、虾米和冬菇,再炒至有香味。加入麻油、酱油、黑酱油和胡椒粉,然后加入糯米饭,炒至均匀(用silicone杓子炒拌黏性的糯米饭)。

3. 撒上青葱和油炸葱。

Fish - Steamed Fish

I just cooked a new dish – steamed fish. It tasted very good and I couldn’t wait to share it.

Ingredients – Makes 2 servings

· 2 fillets wild Alaska cod or tilapia

· 1 tsp tapioca starch

· 1 Tbsp Shaohsing wine

· 1 Tbsp sesame oil

· 2 tsp fish sauce

· 2 tsp soy sauce

· A dash of black pepper

· 5 slices ginger, cut into strips

· 1 stalk spring onion, cut

· ¼ clove garlic, chopped finely or use fried garlic

Method

1. Coat fillets with tapioca starch and put into deep dish. Add all seasoning and garnish with black pepper, ginger, spring onion and garlic.

2. Bring water to a boil in a steamer and then turn down to medium heat, and steam the fish about 15 mins or until cooked.

3. Garnish with fried garlic. Serve warm.

  • 1茶匙 生粉/茨粉
  • 1汤匙 绍兴酒
  • 1汤匙 麻油
  • 2茶匙 鱼露
  • 2茶匙 酱油
  • 少许 黑胡椒粉
  • 5 姜,切细条
  • 1 青葱,切细段
  • ¼ 蒜,切细。或油炸蒜

做法

1. 将鱼片沾上生粉后放在深盘,加入所有调味,然后黑胡椒粉、姜、青葱和蒜放在鱼片上。

2. 蒸锅煮滚水即可调中热,蒸鱼约15分钟或至熟。

3. 撒上油炸蒜,热食。
